Okra is one of my summertime favorites. It’s a staple in the south. Per 3.5 ounces (100 grams) it has 7% carbohydrate, 28% vitamin C & 16% magnesium.
I have always adored fried okra. You know, dipped in corn meal and fried in a cast iron skillet. I don’t eat that way anymore so I had to get creative. This year I found 4 new ways to love okra!
It’s the end of the okra season here in central Florida. Hurry to try and find some and try okra a new way!
- Chop okra, toss with coconut oil & bake at 350 degrees, turning midway for about 20 minutes until browned.
- Grill whole over medium heat.
- Chop, pan sauté with a protein cooking in fat.
- Chop with fresh tomatoes & cook in Instant Pot. 3-4 minutes partially full, 8 minutes if full.
